From Kraków's Kazimierz food scene (where young chefs are reinventing grandmother's recipes with modern technique) to Warsaw's buzzing food halls and Michelin-recognised restaurants, this tour treats food as the lens through which you understand the country. You'll make pierogi with a Polish grandmother who's been folding them for sixty years, taste vodka in a 19th-century cellar where the guide explains why Polish vodka law is stricter than you think, and eat your way through market stalls that haven't changed in decades. Between meals, you'll see the cultural landmarks that give the food its context — the Old Towns, the castles, the museums that explain why this country eats the way it does.

Day 1

Kraków: Arrival & First Tastes

The city where Polish food culture begins.

Arrival in Kraków. Private transfer to your hotel in the Old Town. Late afternoon orientation walk through the Main Market Square with your culinary guide, stopping at Obwarzanek stands (the braided bread rings that have been sold on Kraków's streets since 1394 — there's a royal decree to prove it). Welcome dinner at a restaurant that represents the new wave of Polish cuisine: traditional recipes executed with modern precision, local ingredients sourced from named farms, and a natural wine list featuring Polish vineyards.

Day 2

Kazimierz Food Tour

Eat your way through Kraków's most creative neighbourhood.

Full morning food tour through Kazimierz with a culinary journalist who knows every kitchen in the district. Stary Kleparz market (operating since 1903): pickled vegetables, fresh kiełbasa, mountain cheeses from the Tatra foothills. Then into the restaurants and bakeries of Kazimierz: a Jewish bakery still making challah from a pre-war recipe, a bar mleczny (milk bar — the communist-era cafeterias that have been reclaimed by a new generation), and the pierogi window counters that serve Kraków's best dumplings. Afternoon: Wawel Castle and the cathedral, because you can't understand Kraków without the hill. Evening at leisure — your guide leaves you a list of places the tourists don't know about.

Day 3

Pierogi Masterclass & Vodka Cellar

Learn the fold from someone who's been doing it for sixty years.

Morning pierogi-making class in a private kitchen with a Polish grandmother (babcia) who has been folding dumplings since the 1960s. You'll make three varieties: ruskie (potato and cottage cheese — the classic), meat, and a seasonal wild berry version for dessert. The technique is simpler than it looks and harder than it sounds. Lunch is what you made. Afternoon: a guided vodka history and tasting in a 19th-century cellar. Polish vodka law requires that Polish vodka be made exclusively from grain or potatoes grown in Poland — your guide explains why this matters, walks you through five premium expressions, and pairs them with traditional zakąski (small bites). Free evening in the Old Town.

Day 4

Wieliczka & Country Cooking

Underground salt and above-ground smoke.

Morning at the Wieliczka Salt Mine — the Chapel of St. Kinga and the underground lakes. Then into the Małopolska countryside for a farmhouse lunch: the dishes that fed the region before restaurants existed. Żurek (fermented rye soup), bigós (hunter's stew), placki ziemniaczane (potato pancakes) — cooked over wood, served on enamel plates, in a farmhouse kitchen that hasn't changed much since the 1950s. The farmers talk about what grows, what they pickle for winter, and why the soil in this valley produces the best potatoes in southern Poland. Return to Kraków in the late afternoon.

Day 5

Kraków to Warsaw

The capital's food scene is the country's most ambitious.

Express train to Warsaw (2.5 hours). Afternoon walking tour of the Old Town — rebuilt from wartime rubble — with your Warsaw culinary guide, ending at Hala Koszyki, the 1908 market hall that was restored in 2016 and is now Warsaw's most dynamic food destination: 18 vendors under one glass roof, from traditional Polish to modern fusion. Evening: dinner at one of Warsaw's contemporary Polish restaurants, where the tasting menu tells a story about the country through ingredients — foraged mushrooms, Podlasie buckwheat, Baltic cod, Silesian rapeseed.

Day 6

Warsaw: Markets, History & Modern Polish

From the milk bar to the Michelin table.

Morning at Hala Mirowska — Warsaw's oldest surviving market hall (1901), where the vendors sell seasonal produce, cured meats, and baked goods alongside the flower stalls. Then to a bar mleczny for the real experience: a communist-era milk bar where the menu is handwritten on a board, the prices haven't adjusted for inflation, and the barszcz (beetroot soup) is better than anything you'll find at ten times the price. Afternoon: the POLIN Museum — because understanding Polish-Jewish history is part of understanding Polish food (the bagel, the challah, the stuffed carp). Evening: a guided food walk through the Mokotów and Poznańska Street restaurant district.

Warsaw: Praga & Farewell Feast

The neighbourhood that survived, and a final Polish table.

Morning in the Praga district — the east-bank neighbourhood that escaped wartime destruction. The Ząbkowska Street craft breweries, the Soho Factory arts complex, and the Różycki Bazaar (operating since 1901). This is working-class Warsaw, and the food reflects it: heartier, cheaper, less curated. Afternoon at leisure for last-minute exploring or shopping. Evening: farewell dinner at a restaurant that brings the whole journey together — a multi-course meal that moves through the regions you've tasted over the past week, paired with Polish wines and spirits.
